A Historic Place…

The distillery sits atop a fabulous piece of land, boasting panoramic views and a great sight of the harbor. The estate was built around 1790, and as you tour, you’ll see pieces of history over three hundred years old. The buildings are beautiful—stately built and colored brightly, you’ll fall in love with them before you walk in the door!

…and Historic Name

John Watling himself didn’t leave many records, and only a bit was written about him. His pirating (or privateering) career began before 1680; around this year, he joined up with two other captains, John Coxon and Bartholomew Sharpe, to plunder Central America. He was dubbed “The Pious Pirate” because he observed the Sabbath and prohibited gambling on his ships. An Englishman, he was constantly in conflict with the Spanish. John Watling also settled in San Salvador, which was renamed to Watling Island for two hundred years and is more famous as the island where Columbus is believed to have first set foot in the Americas.

The Rum

John Watling’s boasts three fabulous rums: The Buena Vista, their Amber Rum, and their Pale Rum. Taking advantage of their Caribbean location, the rums are distilled from sugar cane molasses, then aged approximately five years. Their website points out that the aging is accelerated by the heat and compares the age of their five-year rum to twelve-year Scotch! They are aged in white-oak barrels until their master blender deems the taste acceptable. The whole process is done by hand.

John Watling’s Distillery offers tours. These tours are led by amicable, knowledgeable guides who will show you not just the distillery process but also history about the estate. Rum is available to sample for an additional cost, and the gift shop is a great spot to grab some rum, one of the Bahama’s most famous products.
